Chilli Pecorino is a cheese with a rind bearing the characteristic signs of the basket in which it is formed, it is straw-yellow in color with flakes of semi-spicy red chili pepper and with a semi-soft rind. It is a particular product. The name betrays an ancient Greek recipe that was abandoned for many years: it is referred to an artisan workmanship which requires a careful selection of only black olives ripe that have an oil content of between the 8 and 12%. Once chosen, the olive is made sweet with the use of water and salt, which is rinsed again with new salt brine and left to dry in wooden crates for 3 days. When it is perfectly dried, it is introduced in the drums of about 100 kilograms with salt and without water. Drums are rolled in clockwise direction once a month for three months. At the end of the treatment the olive has completely absorbed the salt and it is soft and shiny. It is an olive that proposes an unmistakable and very special flavor.

In the Neapolitan culinary art, Paccheri have origins deeply rooted. Once they were a type of "pasta of poor people" because they were large and few of them were enough to fill the dish. Among the specialties based on chili the first one place is due to 'Nduja of Spilinga, a devilish cured salami, smoked, as someone has written a "red Nutella", but instead of nuts there is pork and small amounts of fat obtained from the girth, the shoulder and the thigh of the pig and red chili dried instead of cocoa. It is an ancient, simple and ingenious recipe. It is a real magic that changes poverty into wealth, taste, color and aroma. It is considered as one of the best sausages of Italy. Historically, it was born as the food of poor people who intended for the consumption of less affluent social classes that draws its strength from the need to use the remaining part of the pork that remained after intended to landowners the more valuable parties. The geniality of these social classes has succeeded in giving life, through the wise choice of the ingredients of our territory, to an alchemical recipe, that has created an extraordinary delicacy. The secret of the flavor of the N'duja does not depend only on the choice of raw materials but especially by chili pepper that are of two types and are locally produced. The pipereju is long and thin, red and spicy, another round in shape, whereas tunduliju is sweeter and fleshy. The relationship, skillfully measured, between the two types of chili pepper is not defined but respects the secret of single recipes and modulates the sensorial differences of the various products. In the past, N'duja was used only spread on bread. Today the most famous sausage of Calabria is made also in glass jars and used in various ways, to flavor pasta, to reinforce a sauté, to give a spicy and tasty push to a plate of meat.

Milon Wine is one of the excellence of Only Good Italy. The grapes are harvested by hand only in the best period of maturation in order to guarantee the best intensity of aromas, then it is stored and pressed. The product that is obtained, with the addition of selected yeasts, is stored in tanks suitable for the maceration at 22-25°C for 10 days; when the required color is reached, everything is initiated to begin the soft pressing. At the end of the fermentation, wine is placed in containers of steel at a controlled temperature, for maturation, where it stands for about a year. A small portion of wine is left to mature in little French oak barrels for at least 6 months before to be put on the market. Paté of black olives is a cream that you typically use spread on toasted bread and canapés or adding a spoonful to give a twist to flavor dishes such as pasta salads or meat, fresh pasta or pizza. Delicious but sometimes unreachable, nowadays these artichokes are more and more available. There are different processing phases of this product, which is cultivated in hilly conditions. Firstly the more delicate buds are selected in a open field in the maximum size of 50 millimeters in terms of diameter. After this selection they are boiled into water and vinegar to be defoliated. Then they are conserved in suitable containers in order to obtain a correct fermentation. All these steps are essential to achieve the correct pH, which is useful for packaging the product. At a later time they are flavored with a variation that makes them even more appetizing, i.e. the addition of peppers and spiced herbs. They are excellent to enrich salads, appetizers and side dishes, but also to go together with risotto or as an accompaniment for meat. It is realized following the old recipe of the Italian tradition and is useful for those people who follow a balanced Mediterranean diet. A simple recipe, original and unique.
