Chilli Pecorino is a cheese with a rind bearing the characteristic signs of the basket in which it is formed, it is straw-yellow in color with flakes of semi-spicy red chili pepper and with a semi-soft rind. The paste is compact white in color with possible holes of a very small size with the chilli flakes visible.

In the Neapolitan culinary art, Paccheri have origins deeply rooted. Once they were a type of "pasta of poor people" because they were large and few of them were enough to fill the dish. It is a particular product. The name betrays an ancient Greek recipe that was abandoned for many years: it is referred to an artisan workmanship which requires a careful selection of only black olives ripe that have an oil content of between the 8 and 12%. Once chosen, the olive is made sweet with the use of water and salt, which is rinsed again with new salt brine and left to dry in wooden crates for 3 days. When it is perfectly dried, it is introduced in the drums of about 100 kilograms with salt and without water. Drums are rolled in clockwise direction once a month for three months. At the end of the treatment the olive has completely absorbed the salt and it is soft and shiny. It is an olive that proposes an unmistakable and very special flavor.

The long tomatoes are cultivated in open fields in the month of April and May, and are manually collected in July and August. They are washed, selected, manually cut, salted and left standing on the frames of desiccation for 4 or 5 days. This is a natural technique and linked to traditions that have been transmitted to us. Immediately after, tomatoes are washed in water and vinegar and grinded together with capers and Mediterranean spices. Pâté is thus obtained and then potted. In order to obtain 1 kilogram of dried tomatoes in pâtés, it takes about 10 kilograms of fresh tomatoes. This pâté is really good to prepare delicious toasted bread or for stuffing sandwiches. Paired to the cheese is delicious and it is even more so if they are stir-fried with pasta and fresh basil.
