In recent years, with the spread of farms, has spread a recipe that was the exclusive use of the family in the past, which has never been used for traditional or industrial preparations, which is that of stuffed peppers with tuna. In the past, N'duja was used only spread on bread. Today the most famous sausage of Calabria is made also in glass jars and used in various ways, to flavor pasta, to reinforce a sauté, to give a spicy and tasty push to a plate of meat.

Milon Wine is one of the excellence of Only Good Italy. The grapes are harvested by hand only in the best period of maturation in order to guarantee the best intensity of aromas, then it is stored and pressed. The product that is obtained, with the addition of selected yeasts, is stored in tanks suitable for the maceration at 22-25°C for 10 days; when the required color is reached, everything is initiated to begin the soft pressing. At the end of the fermentation, wine is placed in containers of steel at a controlled temperature, for maturation, where it stands for about a year. A small portion of wine is left to mature in little French oak barrels for at least 6 months before to be put on the market. Paté of black olives is a cream that you typically use spread on toasted bread and canapés or adding a spoonful to give a twist to flavor dishes such as pasta salads or meat, fresh pasta or pizza. From the selection of the best olives in our territory was born this supreme pâté worked with the traditional recipe. It is a particular product. The name betrays an ancient Greek recipe that was abandoned for many years: it is referred to an artisan workmanship which requires a careful selection of only black olives ripe that have an oil content of between the 8 and 12%. Once chosen, the olive is made sweet with the use of water and salt, which is rinsed again with new salt brine and left to dry in wooden crates for 3 days. When it is perfectly dried, it is introduced in the drums of about 100 kilograms with salt and without water. Drums are rolled in clockwise direction once a month for three months. At the end of the treatment the olive has completely absorbed the salt and it is soft and shiny. It is an olive that proposes an unmistakable and very special flavor.

Delicious but sometimes unreachable, nowadays these artichokes are more and more available. There are different processing phases of this product, which is cultivated in hilly conditions. Firstly the more delicate buds are selected in a open field in the maximum size of 50 millimeters in terms of diameter. After this selection they are boiled into water and vinegar to be defoliated. Then they are conserved in suitable containers in order to obtain a correct fermentation. All these steps are essential to achieve the correct pH, which is useful for packaging the product. At a later time they are flavored with a variation that makes them even more appetizing, i.e. the addition of peppers and spiced herbs. They are excellent to enrich salads, appetizers and side dishes, but also to go together with risotto or as an accompaniment for meat. Extra virgin olive oil of a superior category is obtained directly from the olives and only by mechanical processes. Possible sediment does not affect the quality of the product but to ensure its authenticity. The drupe, characterized by a pronounced Umbo at the top, is transformed to both the black and green; it also possesses a good size (4 kilos) and a high ratio pulp/kernel. The long tomatoes are cultivated in open fields in the month of April and May, and are manually collected in July and August. They are washed, selected, manually cut, salted and left standing on the frames of desiccation for 4 or 5 days. This is a natural technique and linked to traditions that have been transmitted to us. Immediately after, tomatoes are washed in water and vinegar and grinded together with capers and Mediterranean spices. Pâté is thus obtained and then potted. In order to obtain 1 kilogram of dried tomatoes in pâtés, it takes about 10 kilograms of fresh tomatoes. This pâté is really good to prepare delicious toasted bread or for stuffing sandwiches. Paired to the cheese is delicious and it is even more so if they are stir-fried with pasta and fresh basil.
